Farmer's Choice Specials, Last Week March

Our webmaster loves, loves, loves our Pink Navel Cara Cara oranges. Sweet and juicy, but not so juicy to make a mess. She carefully slices off the outer edge of the rind, then cuts into segments, and savors each piece. Such a great food for the still-rainy season. Vitamin C, fiber and needed hydration. The freshly cut fruit containers are a great deal! One pound for $1.99! Freshly cut during the day. GREAT price for hothouse cucumbers! Hmm, good tasty and good for you. Pls spread the word. 1 1/4 cups sugar*
1/2 cup margarine or butter, softened*
2 eggs*
1 1/2 cups mashed bananas (3-4 med.)
1/2 cup buttermilk*
1 tsp. vanilla
2 1/2 cups all purpose flour*
1 tsp salt
1 tsp baking soda
1 cup nuts, optional

Place oven rack in lowest position. Heat oven to 350. Grease bottoms only of 2 loaf pans, 8 1/2 X 4 1/2 X 2 1/2, or 1 loaf pan 9 X 5 X 3″. Mix sugar and margarine in large bowl. Stir in eggs until well blended. Add bananas, buttermilk, and vanilla. Beat until smooth. Stir in remaining ingredients except nuts until moistened. Stir in nuts, if desired. Pour into pans. Bake 2 small loaves for about 1 hr, 9″ loaf about 1 1/4 hrs or until a toothpick inserted comes out clean. Cool 5 minutes. Remove from pans and cool completely before slicing. Wrap tightly and store at room temperature up to 4 days or in fridge up to 10 days. 2 loaves, 24 slices each, 85 calories per slice.

* I use oat flour in my personal recipe due to family members sensitivities to wheat. I also substitute either goat milk or soy milk for the buttermilk also due to allergies. For those who are vegetarian or vegan, I’m sure the eggs and butter can also be substituted. For the sugar, there are alternatives for that as well, but I’ve never used them. Use according to the package directions.

I added flaked coconut to my last batch and it was amazing!
